La nueva dieta sostenible para los españoles 5 (Sinfonía a la Legumbre)

Más o menos superado el trauma de la apoteósica Oda al Cereal que festeja la supuesta benevolencia de hincharnos a pan (idealmente integral, eso sí) para promover la salud presente y futura de los españoles en un planeta ecuánime y sostenible por fin… oímos el runrún de otra melodía. Es la Sinfonía a la Legumbre (el sentido homenaje a la dieta mediterránea tradicional española) en 4 movimientos: las alubias con salchichas de metilcelulosa y proteína aislada de guisante, las lentejas con tofu, los garbanzos con soja texturizada y las fabes con seitán (de gluten puro).
